Coconut Chicken Curry

Ingredients
2 x garlic cloves
1 x celery
1 x carrot
2cm ginger peeled
1 x onion
1 x red chilli, seeds removed (optional)
1 tbsp coconut oil
4 x tomatoes – halved
1 x tin of coconut cream
2 tbsp vege stock (recipe from EDC)
200ml water
1 tbsp of garam masala (recipe from EDC)
600g chicken (breast/thigh)

Step 1 – Add garlic, celery, carrot, ginger, onion and chilli if using to thermomix, sp 7 for 3 secs. Scrape down sides.
Step 2 – Add coconut oil. Varoma, 3 mins, sp 1.
Step 3 – Add tomatoes, 10 secs, sp 4.
Step 4 – Add coconut cream, vege stock, water, garam masala and chicken. Varoma, 30 mins, reverse speed, speed 1. Remove MC and replace with TM basket.

Have by itself or serve on a bed of cauliflower rice.

Serves 4.
