coconut chicken curry

Ingredients 2 x garlic cloves 1 x celery 1 x carrot 2cm ginger peeled 1 x onion 1 x red chilli, seeds removed (optional) 1 tbsp coconut oil 4 x tomatoes – halved 1 x tin of coconut cream 2 tbsp vege stock (recipe from EDC) 200ml water 1 tbsp of garam masala (recipe from EDC) 600g chicken (breast/thigh)

Step 1 – Add garlic, celery, carrot, ginger, onion and chilli if using to thermomix, sp 7 for 3 secs. Scrape down sides. Step 2 – Add coconut oil. Varoma, 3 mins, sp 1. Step 3 – Add tomatoes, 10 secs, sp 4. Step 4 – Add coconut cream, vege stock, water, garam masala and chicken. Varoma, 30 mins, reverse speed, speed 1. Remove MC and replace with TM basket.

Have by itself or serve on a bed of cauliflower rice.

Serves 4.

Raw Balls

155g almonds 100g cashews 360g medjool dates, pitted 2 tablespoons of pepitas 2 tablespoons chia seeds 3 tablespoons coconut oil 3 tablespoons cacao powder

Place all ingredients in food processor and whizz for 30 seconds or more, depending on the strength of your processor.

Roll teaspoons of the mixture into balls using your hands. Roll the balls in desiccated coconut to coat.

Makes 18-24 balls

It’s getting to that time of year again … icy-pole time!! It is so easy to make your own healthy icy-poles with Zipzicle pouches. Please see recipe below…

2 punnets of strawberries 600ml of coconut water

Place ingredients in food processor and whizz for 30 seconds or more, depending on the strength of your food processor. Enjoy!! Makes 12 delicious icy-poles

Almond Cake 2

Ingredients

2 bananas 3/4 cup of self raising flour – gluten free 1/2 cup of coconut sugar 2 tbsp chia seeds 1 tsp baking powder 2 eggs 1/2 cup of desiccated coconut

Place 2 bananas in thermomix sp 4 for 10 seconds

Add remaining ingredients sp 4 for 30 seconds

Bake in oven on 180 degrees for 60 mins.

Sprinkle with extra desiccated coconut and enjoy!

Racing out of the house in the morning before work and need to get your little ones fed – try this up & go recipe

30g almonds and 30g oats, place in thermomix, sp 8 30 secs

Add, 1 banana, 250g almond milk and 10g cacao powder, sp 8, 30 secs.

Enjoy

 

Almond Milk

Is there anyone else out there that makes their own almond milk?? Has to strain the milk a few times to ensure that all the almond pulp is removed?? I have finally found the best nut milk bag ever and tried my recipe out with it and it was a huge success!!

Ingredients

1 cup of Almonds Filtered Water 1 Date

Method

Soak almonds for a minimum of 18 hours in filtered water (ensure there is enough water to cover the almonds) Drain the almonds and place in thermomix Add 1.25 litres of filtered water Add 1 date Process for 90 seconds on speed 9 Strain the mixture through a nut milk bag Store milk in glass jars and use within 3 days
